Recipe #2: Eating in our Marché Country Kitchen

When I went to high school, my cafeteria offered few options beyond burgers, hot dogs and french fries. In fact, I wonder how I am alive today, because I literally ate fries and gravy with a Coke every day for lunch. I even remember how much it cost - $2 for the fries and a loonie for the Coke! (Note: a “fryer” has been specifically banned from the new CDS kitchen!)
Creating an experience at CDS that is the complete opposite of my high school was part of my inspiration for selecting the Marché style experience for our new Dining Hall – an approach and a physical setting here at CDS that will be unique amongst all independent schools.

Imagine a bustling European country marketplace. In one corner, pizza dough is hand-stretched and baked in a hearth-style brick oven. In another, gluten-free noodles and fresh cut broccoli are sautéed with hints of ginger and garlic in a fiery wok, with free-range chicken layered on for those who request. Elsewhere, organic burritos are made to order, while another section beckons with fresh, locally-grown salads and scratch-made soups. The options will change every day and you can sample and eat as many things, in as much quantity, as you like. But no, you can’t get fries with that and there will be no mystery meat on Fridays!!

This marché style experience will be available every day in our “Country Kitchen” with students from Grades 4 to 12 inspired to try new things and adopt an ever-increasing appreciation of the healthy foods available to them.

Students in Grades 1, 2 and 3 will visit the Dining Hall everyday and enjoy the same variety, but it will be offered up in an age-appropriate fashion. We will employ a “family-style” environment, whereby students sit together with their class and teacher and a variety of options are made available right at their table.

And for our youngest students in JK and SK, healthy and hot food options will be delivered right to their classrooms where their teachers can afford the most nurturing of environments for our 4, 5 and 6 year-olds.
