INGREDIENTS

- 1.1lt warm water (105 degrees F)
- 1kg of flour “00” quality (Caputo)
- 40g salt
- 4g of dry active yeast
- 15g malted barley flour or sprinkle a little flour in its place
INSTRUCTIONS
- Add water to a mixer fitted with a dough hook. On low speed, slowly add half of the flour. Once added let the dough settle for about five minutes allowing the flour to absorb the water.
- At this point, add salt and remaining flour once all of the flour has been added. Allow the dough to rest and continue absorbing the water.
- Once rested, switch the mixer to high speed and continue mixing the dough at high speed for approx. 15 minutes, the dough forms like a ball and the sides of the mixer will be clean. This process activates the gluten in the dough allowing it to become smooth and elastic.
- Once mixing is completed, let the dough stand covered with plastic or a damp cloth until it proofs to double in size (approx. 30 to 45 minutes). Fold the dough by 1/3 twice, this allows air to be trapped in the dough. Let the dough rest and rise for an additional hour.
- Tip dough out on a lightly floured surface and portion to your desired size gently pulling each portion into squares. Shape and lift each corner, pinch together and trap more air in the dough before rolling between hand and table to form a ball. Roll balls for round or oval pizzas, or roll logs for party sized pizzas.
- Place in a lightly oiled dough box or and allow to rest overnight in a refrigerator.
